The Oscietra Imperial caviar comes from the Russian sturgeon, a species native to the Caspian, Black and Azov seas. Of medium size, it can weigh from 20 to 60 kg. The recommended combination is with the best brut or satèn sparkling wines.
This caviar is obtained only from the best and largest eggs (over 3 millimeters), and it has a soft, complex taste, with a light hazelnut aroma and a color ranging from brown to dark brown, warm amber nuances, considered by many to be the best quality to be tasted scrupulously pure and leisurely so as to be able to appreciate all of its qualities, moment by moment. It takes at least 11 years for this caviar to be harvested.
