Gaetano Latino

Salsedine 367

Via Giovanni Marradi 11 – Lido di Savio, Ravenna

Biography

Salsedine367 offers, in a contemporary and intimate setting, the chance to enjoy lunch or dinner just steps from the sea — even with your feet in the sand or right at the water’s edge.

The restaurant, the true heart of the beach establishment, showcases the creativity of chef Gaetano Latino, with a cuisine designed to enhance the flavor of each ingredient, guided by the seasonality of the products, and offering excellent seafood, meat, and vegetarian dishes.

Born in a small village in Germany’s Black Forest to a Sicilian family, Gaetano Latino moved to Ravenna at the age of six.
His studies at the Hotelier Institute of Cervia and summer internships at Hotel Rio in Milano Marittima, under the guidance of professor and chef Stefano Faccino, marked only the beginning of a remarkable culinary career.

After graduating, he joined chef Giovanni Baroncelli as part of the team at the Alexander restaurant in Ravenna. It was there that he met Michelin-starred chef Felice Lo Basso, and in 2009 joined his brigade at Alpen Royal in Selva di Val Gardena. This unique opportunity introduced him to the world of experimental fine dining, working with top-quality raw materials and refining innovative techniques thanks also to cutting-edge equipment.

Upon returning to Ravenna, he began a new chapter in his professional life: three years alongside chef Matteo Salbaroli, followed by a brief experience with chef Vincenzo Camerucci and five years at Cabiria with chef Marco Guerrini. In 2019, he took over from chef Baroncelli at Salsedine367, stepping into the role of head chef and carrying forward a vision of reinterpreted traditional cuisine, built on seasonality and product research.
