The Belvedere Restaurant is not only the “stage” where Executive Chef Armando Aristarco showcases, with remarkable talent and heartfelt passion, the repertoire of a Neapolitan chef who, after various experiences abroad, has returned to his homeland to consecrate and celebrate it.
The Belvedere is a magnificent knot binding tradition with what is yet to come, the past with the future, and geographically uniting an entire territory—the Amalfi Coast—sewing together its sea and mountains, its hills and hidden coves, and, more broadly, the whole of Campania. In his dishes, technique is neither ostentatiously imposed nor forgotten; tradition is not used as a pretext or a diversion. Instead, Armando Aristarco’s creations carry his origins, his father’s teachings, curiosity, and the desire to challenge himself, to rise, and to do so with the right tools: sentiment as much as professionalism. No artifices, no forced amazement meant only to impress, but food that comes from the soul, from the heart, from memories of ragù simmering for hours, of Sunday family gatherings, of extra chairs pulled up to the table, or pasta mista bubbling with legumes. Every choice, every intuition, every ingredient obeys a precise intention: to move. And emotions, as we know, cannot be faked.
Thus, Nu’ Burdell consecrates the tradition of pasta mista in an eclectic yet familiar way, giving it an innovative twist. The dish is presented with a theatrical dive—delivered by the chef himself—into a miniature sea and gulf recreated at the bottom of the plate, teeming with a surprising variety of raw and cooked fish. The “Riso Campano” is both a historical and geographical recovery, born in the Sele plain, and Armando’s philosophy of sourcing ingredients with a story pays them the utmost respect. Here, the tomato is rendered almost albino, transforming flavor into an unforgettable experience. Every dish connects, recalls, calls out—and in answer, both land and sea respond, for the Amalfi Coast is the enchanting queen of this duality. Each creation is both memory and window to the future, a whisper from the past showing how that past may live on in tomorrow.

Born in Torre del Greco, near Naples, Armando Aristarco grew up in kitchens alongside his father, a chef and mentor. After completing his studies, he trained in numerous restaurants across Italy before joining Hotel Caruso as a demi chef de partie, where he worked until 2010. His career then took him to Milan, Rome, Bahrain, Singapore, and more recently Dubai. Today, Armando has returned to Caruso, at Belmond Hotel Amalfi Coast, where it all began, to celebrate Campania and its extraordinary products.
