Biography
Rosewood Castiglion del Bosco is located in Montalcino, Tuscany, in the heart of the Val d’Orcia, a UNESCO World Heritage Site. The estate features 42 suites, 11 villas, two restaurants, a cooking school, and a Spa. It also includes one of the oldest wineries producing Brunello di Montalcino and a private Golf Club.

Executive Chef Matteo Temperini grounds his passion for culinary innovation in the deep connection between food, territory, and community—a hallmark of his Tuscan roots.
Born in March 1974 in Poggibonsi, in the province of Siena, his desire to refine his culinary skills led him to France, where the legendary Alain Ducasse appointed him first as Sous Chef at his Parisian restaurant Spoon – Food and Wine, and then as Chef de Partie at the renowned three-Michelin-starred Le Louis XV in Monaco.
Following this stellar apprenticeship, Matteo gained international experience in New York, Lugano, and Macao, broadening his gastronomic horizons. Upon returning to Italy, he worked as Chef de Partie at the world-famous Enoteca Pinchiorri in Florence, before taking a leading role at Il Gallopapa restaurant in Castellina in Chianti, where he earned his first Michelin star in 2002.
In 2008, Matteo became Executive Chef at Hotel Le Sirenuse in Positano, an internationally acclaimed establishment, leading La Sponda restaurant to win its first Michelin star in 2011—a distinction it has retained ever since.
In 2019, he joined Rosewood Castiglion del Bosco, overseeing the entire culinary offering of the resort, including the elegant Campo del Drago Restaurant and the rustic yet refined Osteria La Canonica, the ideal place to discover the most authentic local cuisine.
Campo del Drago Restaurant was awarded two stars in the Michelin Guide Italy 2025, following its first star in the 2023 edition, confirmed again in 2024, and was also awarded 2 Forks in the Gambero Rosso Italian Restaurants Guide 2023.
