Biography
At OSMA, French cuisine is an inspiration, not a rule. We embrace its tradition to tell our own story, free from clichés or affectation.
Here, technical rigor meets creative freedom, and local produce is the foundation of every creation. We believe that gastronomy is a cultural and emotional act, a sincere dialogue between the kitchen, the wine, and our guests.
OSMA is a place where elegance is lived naturally, service is attentive without being overly familiar, and every detail is designed for our guests’ well-being. We do not seek to impress, but rather to share a French art de vivre that is relaxed and authentic.
OSMA was born from Marion and Javier, a couple both in life and in the dining room. He, a Spanish chef from Cáceres, spent over 15 years in prestigious French maisons and palaces, where he mastered technical rigor and an absolute respect for ingredients, while developing his own unique creativity. She, from the Rhône Valley in France, grew up among vineyards and cellars, with wine and the art of hosting in her blood.
Together, we have created an intimate and human space where French cuisine is reinvented with freedom and lived with natural ease. An elegant and serene setting, tailored to our vision, where every detail — from the plate to the glass — reflects who we are and how we understand hospitality.
